Zucchini

I can never get it right...I always end up with zucchini coming out of my ears in the summer. The first year I had a garden I didn't know any better and planted the whole packet of seeds. The huge plants took over almost the entire garden and demanded tons of water. The rate of grow was staggering...I could harvest at least a half a dozen zucchinis every day. We ate them, we gave them away we threw them out for the deer to eat and some just got left where they were. One time I didn't make it out to the garden for a about three days and when I did venture out there I came upon a zucchini that actually scared me and made me gasp it was so big. My first thought was that it was some sort of animal laying there.

Every year since then I have planted a few less zucchini seeds, but I still have tons of them. This year I planted two seeds and guess what...they are everywhere! I'm desparately looking for that zucchini relish recipe that my Mom used to use.

I saw on a morning show last year how they used zucchini for decoration. Scoop out part and stick a candle in? Anyway??? I never worry about planting zucchini because my neighbors are more than happy to share their wealth :)

PS A lady in my ward gardens a lot. She may have a zucchini relish recipe. I'll ask next time I see her.

Hey, I'm looking for that recipe too! I just might have remembered it might be in that old RS cookbook from 1976! Every time I point myserlf in the direction of the cook books, I get distracted & don't make it.

I think Carol has a good recipe. She might not have it with her but maybe her daughters have it.
